Paul Virant of Vie

Inspired by the French word for life, this Contemporary American restaurant brings lively seasonal cuisine to the west suburbs.

The restaurant’s clean and minimally decorated dining room accented with plush white pillows, bright colored flowers and large windows allows patrons to focus on the carefully constructed flavors of their meal as opposed to flashy gimmicks.

Named the 2006 Jean Banchet Rising Star, Executive Chef Paul Virant’s (also of Ambria and Blackbird) seasonal menu supports local Midwest farmers and artisans to create signature gourmet entrees such as:

  • Domestic Lamb Combination: roasted rack and crispy slow roasted lamb, roasted new potatoes, pickled garlic, lovage, ricotta and sweet pepper lamb.
  • Marinated and wood-grilled Kobe steak with house-made naan, local garlic aioli, roasted Nichols Farm broccoli, farm fresh egg and arugula pesto.
  • Green City Market Pasta: hand cut pappardelle, green city market vegetables, chanterelles, herbs and parmigiano-reggiano.

    Finish with one of Virant’s signature desserts such as warm local honey roasted peach crepe with organic cream ice cream and candied pistachios; Michigan blueberry parfait with lemon curd, blueberry compote, lemon poppy seed pound cake and whipped organic creme fraiche; or molten raspberry chocolate cake with raspberry ice cream, fresh raspberries, cocoa nib tuile and chocolate sauce.

    Vie offers more than 85 international and domestic wine selections including half bottles, by the glass and bottles on reserve to pair with your meal.

    Host your next event at the restaurant’s lounge/bar that can fit 24 or the dining room fitting 25-85.

    Vie offers a series of hands-on cooking classes where patrons work exclusively with Chef Virant to prepare luncheon menus served with selected wine pairings.

    For a more introductory level course, Sous Chef David Banczoszek offers a series of classes which focus on core cooking skills.
